The Director of Public Health at the Accra Metropolitan Assembly (AMA), Florence Kuki, has expressed concern over some dangerous practices by certain food vendors.
In an interview with Adom FM’s ‘Dwaso Nsem’ on February 20, 2026, she revealed that some bokhlot sellers use plastic when frying the snacks, believing that it makes them crunchier.
She said some manufacturers of plantain chips do the same. She revealed that to speed up the ripening of plantains, some plantain chip sellers put immature plantains in septic tanks and use the heat from the tank to speed up ripening.

“When bokhlot sellers go to buy oil, they often buy the sachet type. Instead of emptying the oil from the sachet, they put the sachet itself into a frying pan with oil to crisp up the bokhlot while frying the bokhlot. I believe they do the same thing when frying plantain chips and they get crispy,” she revealed.
Florence Kuukyi warned that vendors found to be involved in such practices will face the full rigor of the law if the team encounters them.
However, she noted that the Legislature faces significant challenges with a lack of staffing, limiting its ability to effectively monitor all vendors and protect public health.
“If we come back and get you, we will take you. But the problem is we don’t have enough people. We need more environmental health officers in the system so that we can properly protect our society,” she pointed out.
