Denver has plenty of pizza options, but the metro area’s only Hong Kong-style pizzeria will soon be joining the scene. Metro Pie Pizza is aiming for a grand opening on February 20th in Lakewood.
If you’ve driven past the corner of Wadsworth Boulevard and West 9th Street over the past few months, you’ve likely seen the red double-decker bus next to the future home of Metro Pie Pizza. In Bath, Red Bus Coffee, owned by Alice Choi, debuted in October. Her parents, Ricky Choi and Anna Choi, are pizzeria owners and together they form a business the family has named Red Line Station.
According to an announcement about the upcoming opening, they hope the corner will become a “community hub where people gather, spend time, and encourage connection.” As part of that effort, the Choi’s plan to launch a Hong Kong-style night market on-site this summer featuring street food, art and goods from local vendors.
“The essence of this project is to bring people together,” says Ricky Choi. “We wanted to create something familiar that reflected ourselves, our backgrounds, our families, and our desire to create spaces where people feel comfortable.”
What is Metro Pie Pizza?
The concept, described as a fast-casual stone oven pizzeria, was inspired by the “nostalgic energy of classic Hong Kong subway culture” and Ricky’s upbringing in Hong Kong, where he attended culinary school, a statement said.
Build your own model and offer a complete pie at a flat price. There will also be a collection of signature pies and rotating signature pizzas inspired by Asian flavors. The goal is to “reflect how pizza is often reimagined in creative and unexpected ways across Asia.”
Ricky brings decades of hospitality experience to this project. Over a 40-year career, he has owned and operated several Asian-inspired restaurants and steakhouses. This concept will be my last as I prepare for retirement.
The only other eateries in the immediate vicinity of the Red Line station are Pupuasa Paradise #2 and Big Daddy’s Pizza and Bar, another pizza spot located right next door to the future home of Metro Pie Pizza. The local chain was founded by Matthew Mino and currently operates only an outpost in Littleton and Fat Matt’s, a pizza and sandwich shop that opened in December.
Lakewood Big Daddy’s Outpost is independently operated and its reviews are modest at 3.7 stars on Google and 2.4 stars on Yelp. The Choi family’s new venture should play well with the local community, and I’m especially excited to see how the night market at the Red Line station will work together.
